DID YOU KNOW ?Many home brewers complain about their beer losing its head. This is usually caused by three things. Dirty glasses. Your glass must be clean and I suggest you use a brewing sterilizer with some form of brewing detergent. Do not use ordinary detergents and soaps as they leave a residue that will destroy the head. Always wash your glasses in hot water but remember hot water will not remove the oil from the rim of the glass. Oil on your glass will make the head collapse so use sterilizer and detergent from your local brew shop. The second reason for poor head retention is the beer ingredients. The head on a beer is made from medium weight proteins. Medium weight proteins come from malt. They are not found in sugar (sucrose) or brewing sugar (dextrose).The more sugar or dextrose you use the more problems with head retention.Why do you think commercial beers are made with no more than 20% brewing sugar? So the answer to better head retention is more malt and less sugar. If you don’t like the taste of a malty beer use light malts and you won’t notice the additional malt flavour but you will get great head. The last reason is the age of the beer, the more mature the beer the better it will hold its head. So if you want good head follow these three simple rules.
