Wait a week and a half.I'll bottle it tomorrow and drink one or 4 in about a week.I'm a pretty good judge of strength just by mouthfeel.I don't reckon it's 4%,I've got no idea at all.The sugar and LDM should get it to at least 4% but I dont have a clue about the honey or crystal malt.It's just a guessing game.At the end of the day,if it tastes as good as I think it will,I'll be happy.

NEVER had a brewing failure of any kind.I listen to people and follow the instructions.I have a highly modified Nissan GQ,and an XR400r 2004 model.If I can't get there,it aint worth the trip!

Rastus, where do you get your crystal malt and yeast nutrient from?
My local HB shop is a combination of coles, bigw and mitre 10, none carry everything but they all have a little of something.
And it doesnt seem the aussie brewer people carry them either.
Have you tried the brew yet?

Hi Rosco.I have to go on a bit of a hike to the Brewcraft shop.They have all the grains I have heard of plus more.My local shops are hopeless.Try and google mash brewing suppliers,they will have it all.Trying the beer tomorrow.Cheers

Still not carbonated Rosco,maybe tomorrow.But I have noticed that the yeast nutrients speed up the ferment dramatically.The last 2 brews I have used it in have been done in about three days at 20-24 degrees C.And they seem to smell slighty better during the ferment as well.

Rosco,I just had one even though it still hasn't carbonated.Tastes very cidery and to be honest,not real good,but a lot of potential.Back off the honey to 250 grams and boost the dex up.I've since found out that honey is 95% fermentable so my brew should be just over or around 5.2%,up to you wether to use nutrients or not,but they can't hurt.Remember,it's only been in the bottle 3 days now,but I think this one will need a month or 3.I'll have another one in 2 days and let you know.

Your definetely keen, give me a few weeks and i will brew up a batch. I use more dex anyway becasue i dont do a second ferment.
I will let you know how it goes.
